I am a resident of Arizona and was wondering if I may cross into California with a shotgun, (Mosburg 590) while on vacation in my automobile.

I'm a Noo Yawker, and cannot comment with any authority on the firearms laws of other states, especially those of some absurdly restrictive political subdivision such as California.

That said, I would make the following observations:

Your first resource on this should be the State Capitol in Sacramento... try: http://ag.ca.gov/firearms/

While that site seems to indicate that having a shotgun while traveling is okay, it does specify that it must be kept unloaded.

Given that you'll be going into California, do you really think that the "scary-lookin'" Mossburg (preferred spelling) 590 is your best choice? You would probably be detained, maybe even arrested just for the gun's appearance! Remember, among others, California is home to Nancy Pelosi, Tom Lantos and the "Boxsteen babes," Barbara and not-so-lady-like Dianne. They may not know exactly how to define an "assault weapon," but they sure know what one looks like, and your 590 would be in their Top Ten!

So, if you are determined to actually go to California with a firearm, make sure that you are aware of the risk involved, #1, and, #2, be thankful that you have a relatively enlightened state like Arizona to which to return.
