Adobe Illustrator/How to make type a knockout within a black box

Question
How do I do this? The type currently is white, as soon as I remove the white color to make it transparent, I lose sight of the type. Could you advise please?

Hi Martyn,

You can either leave the type as white (white is not a printing ink color) to create a manual knockout or you can permanently remove the image behind by the following steps. However be aware that once this is done, the text will not be editable.

First, select the text. Then go to Type>Create outlines. Next select the text and the image below and go to Object>Clipping Paths>Make.
