Adobe Illustrator/Illustrator pixelation when making smaller

Question
I am having some issues with Illustrator 10.  Know up front that I am not fluent in 'ai'ology'.  

I have a logo that I have designed and it is quite large both is inches and in resolution.  It looks beautifully crisp.

When I scale it down, it become pixelated and fuzzy.  I've tried saving it as is into a gif or jpg and then size it where I'm using it.  I've tried scaling it down then saving as gif or jpg.  It always some out fuzzy..

Please advise what I'm doing wrong or just not doing...

Hi Jennifer,

So you created this logo in PhotoShop? And now you are placing it in Illustrator and then you are saving that Illustrator document as a jpeg? Or you created the logo in Illustrator and want to save it as a jpeg?

Let me know which scenario is right and please send me your logo so I can see what you're talking about?
