Adobe Illustrator/Creating Letterhead design on colored paper

Question
I need to create a letterhead using a dark blue font and illustrations that will print onto grey paper. I have CS2, and it's been a while since classes on basic Illustrator techniques! How do you get started setting up the page to create the letterhead without the end result being muddy blue on the paper? Do I need to pick out a certain paper first before even starting to see how it will look? A relative who works at a local church needs new letterhead, and I offered to create it for her. I want to create a file that can go right to their printer without them having to make adjustments or coming back and saying that the color blue I used in Illustrator turned muddy on the grey paper. I want to keep my aunt happy, and the printer happy! Plus, this is just a rough draft. She may see it and decide they want purple font and yellow paper for all I know, so I need the basic initial steps on how to make it work in any color arrangement! Thanks in advance for any help!

HI Victoria,

Its not how you design the letterhead, rather the colors you choose. If you choose a dark blue color, it will become muddy on the gray paper. You will have to go with a lighter blue and when it prints on the gray, it will be darker.
