Tom,
Thank you in advance for reading this question.  I am familiar with photoshop and just starting with Illustrator.  My question for you is, what is the best way to get a great overall knowledge of illustrator.  Thanks!

Hi Austin,
A good place to start is with Adobe's Classroom in a Book.  They have different books for different programs.  The books come with a CD that has actual files you can work with.  The book is set up with lessons.  
This is where I have people start.  Then as you gain an understanding of your needs we can target your learning to more specific areas.  That comes later!
Start with that and if you have any questions email me here.  I'll be glad to help you.
By the Way, you'll probably want the same version book as the software you own.  Most of the commands and tools are the same but there are some that have changed that if you don't know where to look it will drive you crazy.  Try Amazon or half.com for the books.
