Question
I want to create bullets in illustrator - yes I can use wingdings, symbols etc and do them myself, but I want to know if there's a menu choice somewhere to create them.

There's no automatic bullet feature that I know of.
I just ALT-0149 my bullets (PC).
If you have CS2, you can use the Glyphs palette (Type > Glyphs) but that's about the most help you're going to find in AI.
