I know the question is old, but I just had the problem for the first time today, and managed to fix it.
When I opened the file initially, Illustrator10.0.3 told me that it had to make a couple of font substitutions. One of these was for a single character (an arrow). I selected that character, reselected the font (there were two in the submenu that both said regular, and I picked the one without the diamond next to the name), then converted that character to an outline.
I wasn't sure what was in the other font; I was only aware of two others that were in the document, but I've been revising it every July or August for several years. So I used the Find Font command. The other font that had a problem was listed in the top pane, so I clicked on it to see what was in it. It turned out to be a few labels that should have been in Arial (they were in Myriad Roman, which is probably Illustrator's fault in the first place!). So in that dialog, I had the program change all instances of Myriad Roman.
I closed the dialog, crossed my fingers, and again tried to save, giving the file a new name just in case. Success! I even then saved the file directly as a PDF and had no problem there, either.

I am have the same problem. Transferring to a new file, changing the font has not effect. I have recently updated MacOS. Added Acrobat 9 Pro and 9 reader but nothing allows me to save an Illustrator 10 file with text regardless of the font.
