Adobe Illustrator/grayscale turns to cmyk

Question
I just sent some ads to a newspaper and they got back to me and told me that my eps files were set as CMYK and if i would be so kind as to submit them in grayscale in the future. I had changed them to grayscale before i sent them to  begin with because they asked for grayscale. I selected all and converted to grayscale thru the filter -> colors, resaved and emailed them. but when they opened them, they were cmyk. Am I doing something wrong on my side? I worked in printing for a number of years and every now and then I would get logos or business cards done in illustrator and when i would open them the colors that should have been spot were showing up as cmyk.

And sometimes, newspapers are wrong!  =)  I send lots of files to papers, too. They are not always staffed by the most experienced people. Most often, they know what they are talking about but sometimes you get a new person who doesn't know the software...
