Adobe InDesign/how to layout spreads to print center binding?

Question
I'm working as a designer and layouter in a magazine . every month i have to change the pages layout spreading so i can print for a 40 pages stampling binding magazine. i use indesign cs3 for my job. It's really  tiring and boring to move the pages. if you can hardly understand me..it because i don't know what is the name of this activity..  let me explain.. when you print stamp binding magazine you have to pair page like this
for example 8 pages booklet
left-right
8-1
2-7
3-6
4-5

1.do you know the name of this activity?
2.is there any way to automate this phase in indesign?
3.and if there is such way, will the page number change?
many of friends says the printing service will do that for me.. but the printing service i use can't do this for me because they use diffrent software(cs2), so i have to do this myself then export the spread pages to pdf.

4.also i want to ask how to customize page number so it will start from the number i want?

can you help me? pleasee ..

Hi Aileen, thanks for the question.

InDesign CS3 has a feature called Print Booklet under the File menu. It will open a dialog that has numerous options. You might have to see how they all work with your specific project, and there might be a bit of a test period, but I'm sure you'll find it helpful.
