Hello Mr.Riaz,
              As more and more companies are preferring to have people apply for jobs online (through their own websites) and the preferred format of an application form to be submitted is in the format of a PDF for all the obvious reason ( one being that with the embedding of flash) cv's can become an interactive experiences for the employer .

I was just wondering is it possible for me to create a CV in Photoshop and convert it into and editable PDF which can have content added to it later.

Better not to make any text version in a Phosotoshop because it is a raster based software. if you really want to add and edit your stuff later even in PDF, try making it MS Word or InDesign. Illustrator can also be used for this.
