Dan,

Once a model (18 years old or older) signs a photo/video release form then I pretty much have all the ownership of all the images/videos and I am pretty much protected from being sued right?

Not necessarily.  It depends upon the provisions of the release, your jurisdiction, and what you plan on doing with the content.  If it is illegal whether you reside to contract for the production of sexually-explicit content, then your release form is effectively void.

Also, there is no way to prevent yourself from being sued.  The best thing you can hope for is that your written agreements and your business practices are sound, which give you strong defenses.
