As you are based in Australia, I know that it is exceedingly difficult to produce adult films there, so I unfortunately don't have a good answer for you.
If you do not have any background or experience in the industry (and assuming you can relocate to a jurisdiction where it is legal to produce adult films), your best bet is to try to gain experience working on a set to see how productions are done. You may then want to try producing your own amateur films to get a sense of what works and what doesn't.
