What class would you say is the hardest class beating? and I'm looking for a fast kill but not to be killed so easily who would you recommend? and is the priest weak in pvp

Answer
Thats a pretty tough question, because it depends on how you are geared and how experienced you are.  

Each class has its own strengths and weaknesses.

Rogues are awesome for pvp.  #4.  On my Rogue, I can usually 2 or 3 shot a cloth wearer, and kite a warrior to death.  Shaman, other rogues, and druids are bad news tho.

Druids are tough to kill if they are feral.  They have abilities that heal them when they are crit, and taking down 20k health on your own isn't too easy.  BUT, they don't deal that much damage.

Priests are so NEEDED in PVP.  Not necessarily weak tho.  With psychic scream popping every 20 secs, and great DOTS, its easy to stay alive.  Plus everyone else will try to keep you up, as you are the healer.  As far as solo survivability, not likely.

Mages are really good in PVP.  High DPS, ice wall to protect them, blink to get away.  Probably #2 for PVP in my opinion.  Downfall is you wear cloth, so damage reduction sucks if you confront a Shaman or get ganked by a Rogue.

Shaman are Really good as well.  Frost Shock, plenty of totems to keep you down, and they wear mail.  #3 in my opinion.

Hunters are weak, don't bother.

Pally's are decent.  Plate wearing, plenty of stuns, bubble every 5 mins, and can heal.  Damage output is marginal, as they can be beaten by a skilled leather wearer.

Warriors are weak, stay away.

DK is king.  #1 on my list.  (until they nerf it)
