Question
Is it healthy to do 30 minutes fast walking and then stretching, with some weight training on some days, every single day?  Or is it necessary to have a day off?  Can it be harmful to the body not to rest at least once a week?

Working out every day can lead to over training and a negative effect on your body. The American College of Sports Medicine recommends most days of the week. Even though that leaves room for interpretation I recommend no more than 6 days a week. You can train both cardio and strength all 6 days with exceptions. The same muscle group should not be trained on consecutive days. I also like the fact that you stretch after your workout. That is very beneficial and you should continue to do so. If I were to deign a plan for you I would have you do cardio 6 days and every other day incorporate strength training, however that is just one way of doing things. Hope this helps.
