how much exercise would a person need to undertake to maintain their fitness?

Answer
It will depend upon how "fit" you are.  Generally, cardio conditioning needs to be done 2x weekly to maintain aerobic fitness, performed at the high end of your training zone.  Strength training can be done as little as 1x weekly, as long as it is a high-intensity training program to maintain your strength level.  Stretching is the hardest component to determine minimum requirements, as you can lose your flexibility quickly.  Probably 2-3x weekly is a good bet.
