ANSWER: Dear Bill,
I'm not sure I'm understanding your question, but I'll share what I know.  Potatoes have eyes.  Keep a few around and they will begin to sprout.  Cut the potato into pieces, each including a sprouted eye and that's what you plant.

Bill,
Just some place cool.  I keep my potatoes in the kitchen and take note of the ones with several eyes.  It seems in a matter of a month or two, the eyes will sprout.  We plant potatoes in March, so I don't save any for planting until the end of December or first of January.
