Question
why does over farming with the same crops result to depletion of minerals in the soil?

Each crop takes a certain amount of fertilizer and minerals to produce its mature crop. If this is not replaced the crop will not be able to produce as it should. Rotating the crop will allow the soil to rest, and use this time for the elements to replenish themselves. Just as you do at night when you sleep.
