Question
We planted our potatoes early this year (May 5).  Last night we dug up two plants (five nice size potatoes)  Problem was, there was no taste to them.  

This is the first time planting so early and the first time there has never been any taste to our potatoes.

We also noticed that the new potatoes are starting to root themselves.

Any idea what's happening?

I'm confussed... In 40 days you had nice size potatoes? Mine have been in the ground since May 12th and they are about two inches tall and no sign of setting potatoes at that size.
I'm thinking you dug last years potatoe crop now. Did you have potatoes planted in this area last year?
New potatoes need to go through a dormant stage before they will sprout.
If you would answer this about the type of potato you planted, where did you get the seed and did you have potatoes in this area last year, I think we can figure out why they taste like they do.
