Greetings, and many thanks.

You say, "The ear can simply be plucked from the stalk." So am I right in understanding that you cut the stalk without holding it at all, and then remove the ear when the stalk is lying on the ground?

Dear Simon,
I'll answer the PS first.  We call Messiah, Y'shuah and we do believe he has come and is coming again.
Now, for the corn, the sickle is used on the stalk, not the ear.  The ear can simply be plucked from the stalk.

Simon,
You can harvest two ways, but never hold on to the target of a sickle.  You can cut the stalks down (without holding them), then pluck the ears off of the stalk.  Or the next suggestion, and this is the way we do it.  You can pluck the ears, as they are about hand and arm level, then you can put the sickle to the stalks afterward.
