Air Travel/is possible to extend flight stop?

Question
We will be going to East Europe. Some problem to get non stop flight at certain time. So I was looking at 1 stop direct flights instead. Dose stops are in West Europe. Because I always want to see West E. as well, so I come up with idea to stay at that added stop for 1 or 2 weeks (instead for few hrs waiting for next airplane) and using it for extra vacationing in that "STOP country" as well. And then continue our trip to E, Europe after that. Is it possible, Do airlines allow it without asking fortune for it. We are budget travelers and not looking for ridiculous charges. We are flexible. What you think? Or should we dump that idea?
