Hi, I see Ally Mcbeal in Italian language, so I don't have a clear idea of why He is called Biscuit, the reason of this nickname.

Hi,

The reason he is called "The Biscuit" is pretty murky to most Americans too actually.  You can read what David E. Kelley (the creator) had to say about the nickname here:

It boils down to the idea that it's a childhood nickname, and as a child he was overweight, so he was called a "biscuit", which in America is a soft doughy sort of roll.
