In your profile you reference "latex in fruits and vegetables eaten out of season and out of region" can you expand on what that means?

Answer
Yes, all plants store their carbohydrates and proteins as a form of latex while in the growth phase but convert back with ethylene hormone at the peak of ripeness if plant ripened. Since 1959  the industry picks fruits and vegetables green and try to convert with ethylene gas in the warehouses but this produces and injury type latex protein so out of region and out of season fruits and vegetables are higher in latex so out of season and out of region fruits and vegetable are better canned or frozen since these would be processed as plant ripened and have less latex
