Question -
How does homogenization and pasteurization affect the nutritional qualities of milk? Does organic milk go through homogenization and pasteurization typically?

Answer -
Mr Smith
Thanks for your question.
Except in a couple of states, milk must be pasteurized to be sold in stores.  If it's a low level of pasteurization, it may not affect the quality of the milk.  Even organic milk will be pasteurized.
Homogenization separates the milk, creating non-fat, low-fat, cream, etc.  Many people believe this is harmful for the body and should be avoided.  Many organic milks are homogenized, but an increasing number of organic and non-organic milks are not.
For more information, I'd suggest you check out the realmilk.com website, or the weston price foundation.

Answer
Mr Smith,
Goat milk is very comparable to cow's milk in nutrients.  It actually has more calcium, B vitamins, and protein than cow's milk.  It is also considered better for many people who are sensitive to cow's milk.  Often they are able to tolerate goat milk but not cow milk.
Thanks for your question.
