I was just wondering what the translation for "God watches over me and protects my soul" would be, and also is Latin and Italian closely related or even related at all? Thank you.

The translation for "God watches over me and protects my soul” is:

“Pro me Deus vigilat et animam custodit meam ”.

Please note that:
God = DEUS
watches = VIGILAT
over = PRO
me =ME
and = ET
protects =CUSTODIT
my = MEAM
soul = ANIMAM

As for Latin and Italian, these two Indo-European  languages are closely related not only because Italian derives from Latin, like French, Spanish, Portuguese and Romanian, but especially because most of the vocabulary is closely related between Italian and Latin and moreover Italian as well as Latin, but unlike English, is spelt exactly as it sounds.
For example:
Latin SAPIENTIA; Italian SAPIENZA(wisdom)
Latin CASA, Italian CASA (House)
Latin MORI, Italian MORIRE(to die)
Etc.
