What are some side effects/risks of having anesthesia?

What happens if a person is allergic to the anesthesia drugs?

This question is really so broad it is hard to answer briefly without being overly general and uninformative.  Additionally, you did not mention the type of anesthesia (?local ?general) with which you're concerned or for what it is intended.  Review the many available www resources for such a general question--I'm happy to answer more specific confusing issues.

In any branch of medicine, pharmacology or dentistry if a person is allergic to a particular drug then a secondary agent would be chosen as an alternative.....this is not unique to anesthesia practice.
