Question
1) what are the side effects of too much anesthesia administer during several heart-cats?

2)  can too much anesthesia, down through the years, cause one to feel like his/her gall bladder is giving them problems.

Answer
I assume you mean heart catheterizations. The side effects are the same as they are for any anesthetic. Heart caths are no different. Obviously the worst side effect is death which is why anesthesiologists make sure not to give too much.

There is no long term effect of anesthesia on the gall bladder.
