Anthropology is the "Grand Father" of the studies of "Man" (Anthro = Humans/pology = Study of) Thus any aspect of the study of Man, falls under the Umbrella of Anthropology. Psychology and Sociology both fit under this umbrella as do Medicine, economics, Archaeology etc...
Psychology is the study of the "mind" of man. There are many sub-categories from Sports to diagnosing brain disorders that impact behavior.
Sociology is the study of the social groupings or human societies. There are several sub-groupings here as well including political geography, Social work, ethnography and linguistics.
There are combinations that one can study as well such as Socio-Psycology or the study of the behavior of crowds or mass hysteria
