Question
I'm having an Hors d' Oeuvres party with about
200 attending. How do I figure the selection and
amount of food to have? It's for a class reunion,
and it will be in the evening.

Dear Ryan,

I would normally suggest about 7 pieces or more per person for an evening event if it is at the dinner hour. You may wish to include some buffet items in addition to tray passed.
Normally, 1 of each item per person is sufficient unless it is an item that is particularly popular such as shrimp or crabcakes. I usually prepare at least 1.5 per person of the items I know will be popular. Other items, which might be considered more exotic and might not appeal to everyones taste can be scaled back. Its all very regional and group specific sometimes. Good Luck
