Question
I make pickled eggs and some times I have a terrible time peeling the eggs. Do you have any suggestions.

thanks,

Answer
Hi Mark!

Here's a couple of tips:

- Older eggs peel easier.
- When the eggs are cooked, immediately immerse them in ice cold water. Keep the water cold, when it starts to warm up drain and refill with COLD water. Keep doing this.
- Break the bottom of the egg first - the wider end. This breaks the vacuum.
- Roll the egg on the counter to completely break the shell.
- Peel under cold water.

I've also heard that poking a pin through the bottom of the egg before cooking helps peel them, but I've never tried this.

Good luck!
