Question
Do you have a good recipe for hot crab dip or hot crab and artichoke dip. I live in Oregon and it is crab season and we have lots of it. Thank you. I need it for a party this weekend.

Answer
Hi Marilyn!

Here's 2 really good recipes..

Hot King Crab Dip
8 ounces cream cheese
1 Tblsp milk
1 cup (1/2 pound) crab meat
2 Tblsp finely chopped onion
1/2 Tblsp salt
Dash of pepper
1/2 cup slivered almonds
1/4 cup crumbled potato chips

Preheat the oven to 350 degrees F. Blend the cream cheese and milk. Combine this mixture with crab meat, onion, salt and pepper. Mix well and spoon into an oven-proof baking dish. In a separate bowl, mix the slivered almonds and a few crumbled potato chips. Sprinkle this mixture over the top of the cream cheese and crab meat. Bake the crab dip for 15 minutes. Serve hot. Yield: about 30 hors d' oeuvres.

Warm Crab, Artichoke & Parmesan Dip

8 oz Cream Cheese
1/4 c Pepper, red bell, minced
2 c Mayonnaise
3/4 c Crabmeat
1/4 c Green Onion, minced
2 c Cheese, parmesan, shredded
1 tbsp Lemon juice, fresh squeezed
1 tsp Garlic, minced or pressed
1 can Artichoke hears; drained
1/4 tsp Tabasco, or to taste
Parsley, minced -garnish
3/4 c Onion, thinly sliced
Green Onion, sliced -garnish
1/2 c Celery, minced

In a medium bowl, stir cream cheese til soft, then beat in the mayo until just blended. Don't overmix. Fold in remaining ingredients, except the garnish, until well combined. Put the dip in a 9" x 13" baking dish or ovenproof serving dish. Smooth out top but don't pack it down. The dip can be covered & refrigerated up to 2 days at this point. Shortly before serving, preheat oven to 425. Bake dip until it just starts to bubble around the edges & the cheese has melted, 8-12 minutes. Sprinkle w/minced parsley or green onions and serve immediately, with toasted bread or crackers for spreading. (thin slices of baguette brushed w/little garlic & herb seasoned olive oil, lightly toasted).

Hope this helps!
