Question
my mother used to make water chestnuts rolled in a slice of bacon, but i don't remember what sauce she covered them with. do you know any ideas? thank you

There are many different types of sauces you can use. I'm sending you two recipes - each use a different type of sauce.

1 pound bacon
2 (8 ounce) cans water chestnuts, drained
1 cup mayonnaise
1/2 cup white sugar
3 tablespoons dill pickle relish
1/2 cup ketchup
     
Preheat oven to 425 degrees F (220 degrees C). Wrap single pieces of bacon around individual water chestnuts, securing with a toothpick.

Place the wrapped water chestnuts on a large baking sheet. Bake in the preheated oven 20 minutes, or until the bacon is crisp. Remove from heat and drain.  

In a medium bowl, mix the mayonnaise, white sugar, dill pickle relish and ketchup. Pour the mixture over the wrapped water chestnuts.

Bake in the preheated oven 10 minutes, or until the sauce is hot and bubbly.

1-pound bacon
1 (8oz) can whole water chestnuts
2 cups catsup
2 cups brown sugar

Cook bacon just a little.

Cut each piece in half.

Put whole water chestnut on half-pece of bacon and wrap bacon around water chestnut. Use toothpick to hold bacon.
Lay in casserole.

Make sauce by mixing catsup and brown sugar. Pour over water chestnuts and bake at 350 degrees about 1 hour or until bacon is done.
