Question
Suzette,
Save me. I hate to cook. Impulsively, I asked a bunch (12) of my co workers to come to my home after work next Friday for Happy Hour and snacks.
This is the beginning of spring break for us. Just tell me what I can put out, besides beverages,  that takes little time and effort. Thanks so much.

Answer
Hi Harriet!

How about a pumpernickle loaf with spinach dip? Buy a round pumpernickle loaf and cut a big "bowl" out of the top. Cut that piece up into one inch cubes. Arrange on a platter (or large plate) around the loaf.

Mix the following together for the dip:

1 cup sour cream
1 cup mayonnaise
1 pkg Knorr vegetable soup mix (or any dry veg. soup)
1/2 pound of frozen spinach, thawed and finely chopped.

Put the dip in the bread bowl when you are ready to serve.

Don't let the spinach turn you off - this is absolutely delicious!

Other than that, why not just do a vegetable tray (cauliflower, peppers, broccoli, mushrooms, carrots, celery, or whatever you like) and perhaps a cheese and cracker tray.

I hope this helps!

I love to cook. I feel that I can competently give advice on recipes, preparation, ingredient substitutions, problem solving (i.e. what went wrong?), etc. From a quick dinner in 20 minutes or less, to a formal dinner party for 12, I`ve done it all!
