I am looking for a flavorful snail salad recipe.  I would perfer it to be low sodium. Any suggestions that you have would be most appreciated.  Can you help me?

Hi Luella!

This is the only recipe I have for snail salad. You add however much salt you prefer - nothing else in here is high in sodium. I prefer to use a couple of drops of hot sauce instead of the hot pepper flakes.

1 pound snail (conch)-- well cleaned and thinly sliced
3 stalks celery--chopped
1/2 cup Italian parsley--finely chopped
1/2 cup olive oil
2 tablespoons wine vinegar
1/2 teaspoon oregano
1/4 teaspoon basil
4 cloves garlic--finely chopped
1 pinch hot pepper flakes
salt and pepper--to taste

Combine all ingredients, refrigerate and let marinate overnight. Enjoy!
