Greetings!

We have a 1936 Tudor Revival style house in North Florida which is on the local historic register. We want to add a roof over the back deck that will complement the style of the house.

We would like the roof to cover the entire deck (i.e. span all 3 gables).

What style would you suggest?

Answer
It is going to be difficult to run a covered porch at the rear and connect to the double gable roof.
I don't know why you are wondering what roofing to use.  I would match the existing shingles it looks like from your photo.
This rear elevation does not look like Tudor revival to me unless it was remodeled a few times!
Oh wait: you want to span all three gables?
It's going to be a mess.  
A little bit of geometrical study is in order.  Not sure how this will work out at first blush.
