Question
Hi there, I am in the process of learning how to use Photoshop, so excuse me for my ignorance.  I have two images I'd like to edit.  The first has dark text on a lighter gradient background, and I would like to know how to remove that text without making the background look altered.  The second has text that I would like to alter to say something different.  If you are able to give me some guidance I will be very grateful!  Thanks!

this is assuming both images are single layers

first: use the clone tool to select the gradient and then paint over the text, or, copy a section of the background and paste it over the text.  

second: nothing you can do here really except paint over the text and insert your own.  if the text was in its own layer this would be as simple as selecting that layer, selecting the type tool and editing text. but I assume this is not the case.  Try to use the clone tool to cover the text.

This is not my expertise at all - I am a conservator but I have some experience with photoshop so please do not think my word on this is exhaustive.
