The book format you describe sounds very much like our Diffusion eBook format. You can find over 220 published eBooks as well as instructions on how to make them yourself on our website:

Actually there is a book structure called "slot and tab" that sounds like what you are looking for in the book "Creating Handmade Books" by Alisa Golden in the "Cut and Folded Books" chapter. There is a description and how to make this book with slits or triangles cut in half the pages in the center seam, and slits or diamonds cut in the center seam of the other alternate pages. No glue, sewing or stapling is involved. The pages lock together. The flexagon book is a folded book from one piece of paper and is a different structure.
