When a girl texts me and says she was thinking of me after a certain amount of time not communicating, does that show interest ? In what ever way you look at it ?

In "what ever way you look at it"? No, I can look at it in many different ways - some about interest and some not.
IN GENERAL, there's some interest there USUALLY, but frankly, that's not enough to go on, nor does it show enough interest for anything other than a text back.
Texting is a dating/relationship killer. Don't use it.
