Would a 2003 Chevy Tahoe have a plug in the harness for a factory dvd player, if it didn't come with a dvd player.

no there is not a plug there is a port on the back side of the radio for the factory dvd audio
you can also use any dvd player and this interface to feed the audio in to the factory system
