Auto Insurance Claims/False statements to Auto Insurance

Question
I have NO insurance.  My "friend" hit me, tore off my front bumber(trying to anticipate where i was parking)  and filed a claim with her provider.  Adjuster says roughly $2800 in damage to my car.  I have been without a vehicle for work
fir 2 weeks.  "Friend" fibs to her provider, first letter from tyhem now denies any payment.

Answer
Unfortunately it is very common for there to be conflicting statements about parking lot cases.  Sometimes people lie and sometimes they just have different opinions about what transpired.

If you believe strongly that she is liable for your damages, your only option is to sue her in small claims court.  You can do this without a lawyer.  Go to the courthouse and the clerk can give you instructions.  Her insurance company will be required to assign a lawyer to defend her.  This will cost them money.  They will then re-evaluate whether or not they think they can win or whether they should offer you a settlement.  

If the case goes to court, you will need whatever evidence you can provide that supprots your  case.  Are there witnesses?  Even if they were passengers, they can testify, although they will be considered biased and less credible than if independent.  Will photos of the damage support your version over hers?  Was there a security camera in the parking lot?  It's a good idea to create a professional looking diagram and have scene photos to show the judge.

Make sure you get insurance for next time, so they can help you.
