Question
QUESTION: Temp gauge much cooler than normal.  Coolant level ok.  Car seems to use more gas, hard to tell.

ANSWER: Sticking thermostat can sometimes cause this.

QUESTION: That might be it.  Sometimes the temp gauge goes up to normal and the drops down to cooler than normal.  Should I get it replaced asap?

Answer
Some sensors on your car are controlled by the temp.Especially on start up when the computor is in open loop.The engine must reach max operating temp for the computor to go into closed loop and max efficiency.If it cannot reach this temp,the fuel economy will be higher.I would change it as soon as you can.
