How many children (beginners) would you recommend or is recommended
to a class.

Hi Marie. In my experience, and I'm specifically referring to classical ballet training, 15 children per class would be the maximum to teach well. However, if you have a couple of competent teaching assistants in the class to help organize and also give corrections and coach students, then you can add 3-5 students per assistant.

Classes are different also, sometimes you get a more mature group together and the class works better than average, and sometimes it's the opposite.
