How do you explain Matt 5:7,8 and Heb 4:1-11,? There are many places in the bible that tell me that the Sabbath was not changed, and the Ten commandments say to remember the Sabbath day.

One of the most profound explanations on the Matt. 5 if found in a little book called, " Christ Object Lessons" by E.G.White. I would STRONGLY recommend this book for your full understanding.( And many other books by Mrs. White)

Your second question of the Sabbath. The Seventh Day is the Sabbath of the Lord, not Sunday. The observance of Sunday is a Pagan practice that the Universal Church has adopted without any scriptural basis. PLEASE read this book " The Great Controversy" by Mrs. White, for your complete understanding.
