Question
do you know if there is a reason you would leave the center cup out when serving communion?

Blessings and thank you for your question.

I believe you are asking about the center position in the silver communion cup holder.  Some churches use the center position to fill one cup with water for those who are alcoholics and do not wish to even taste grape juice.  Other than that, I don't know of any other reason.
