Question
I'm currently helping out in the 7-8 year old class.
Can you offer any tips on keeping order in the class?  We are constantly being challenged with
bad behavior. There are usually about 4 or 5 kids
causing most of the problems.

Not knowing some things like size of class and amount of adults I will just share a few ideas with you.

If the class is large you may need to split in two classes.  Span of control is always an issue. Split the rowdies up in the two classes.  

Even if you don't have enough for two classes you may want to set up one just for the rowdy ones.  There may be a future preacher or teacher in that group if you have the folks to take the time for their special needs.

If you can't do a class you may have to just separate them  or take them home.  Taking them home may make them think or the parents may keep them home.  While that is sad you cannot sacrifice the good kids in order to redemm the undisciplined.  You can only do what you resources allow you to do.  Sometimes tough love is the only answer.
