Question
I am getting ready to open a hot wing restaurant overseas.  I have selected the
sauces I want to use...all made from scratch.  What is the best method to mass
produce these for consistency  in taste, and safe storage?

Since I have done a lot of overseas travel, I may have some insight, but not much.  You don't mention where overseas.  How do you know your sauces will work? How do you know the ingredients will be available where you will be located. How do you know if the ingredients you use here will have the same taste there? For safe storage, do they require refrigeration?  If not, then a cool dark area will probably be OK.  Also, you may need to check with local laws for any requirements. If you are unique enough then you may have good luck, but most Europe and South American cultures like their foods and flavors.  I've been to several so called American restaurants and bbq places in other locations outside the US and they have all adapted their flavors for the local residents - definitely not American.  Just like we have adapted Chinese and other foods for our tastes not necessarily the way they taste in their own country.
