AnswerHi Joanne,
Roasting a whole pig is allot of work but the end result is well worth it. Make sure to recruit some people to help you.
This URL will give you the basics of pig roasting. They are using charcoal but your heat source is propane that is the only difference.

These are some of my tips for pig roasting as well as carving :

Allow about one hour for every 10 pounds but use a meat thermometer to ensure doneness.
Just make sure you have the pig wired with something like chicken wire so that the meat don't fall off as it gets done.
After reading those urls don't get intimidated. Just have all your tools ready and a couple of friends to help you and you will be so pleased with the end result and so will your guests. You can do it!
Happy Pig Roasting,
Regards,
Misty
