Question
Can a Boston butt be cooked using a propane fed infared rotisserie? Is it better to do this or use the indirect heat method with the butt on the grill?  Or, should you use the rotisserie with the burners furthest from the rotisserie?  

Also, I understand that smoking can be accomplished on a gas grill by putting soaked wood chips in HD aluminum foil and placing the pack directly above the heat if the 3rd option above is valid?

Hi,
Boston butt is best cooked using indirect or slow heat methods of cooking. Which means cooking it for a long time over a slow heat will give it the best results.

I don't really like infrared for cooking Boston butt. You should be able to use the rotisserie without using the infrared (well hopefully most infrared grills I have seen have that option but I could be wrong).

Yes you can also use the wood chips if you are not using infrared heat source by putting them in foil and poking a bunch of holes in it for the smoke to come out of.

The one thing I would also add if you are using a rotisserie to use a mesh around your roast to ensure it will not fall apart while you are cooking it in this manner.

Usually if i am using a gas grill I will place a pan of water under the roast that is on the grate and light the burners away from the roast. I put wood chips in foil as described above on each side of the roast close to the heat sources so that a slow smoke happens.
