Question
how many pounds of shoulder (bone in ) and pork butt ( bone in ) do I need to purchase to grill for 300 servings of barbeque.

Hi June,
Usually I use this rule 1/2 pound per person if its boneless and if its bone in I up it to pound or close to a pound. I also factor in side dishes that will also fill people up as well as the kinds of eaters you will be having. If you want to be on the safe side I would do 150 pounds of shoulder and 150 pounds f pork butt and you will have leftovers. Pork Butt is really nice the second day. Otherwise I would do it 3/4 pound per person of boned in meats total and with sides you would still have leftovers.
I know this is not really all that helpful until you think of the guest list. If there are allot of children you will not need to cook as much meat. If its a wedding party with allot of eating and drinking I would go closer to a pound a person as at outdoor weddings people seem to like to graze over the food table for hours.
