Hi John, just want to ask what additives can I use to tenderize my pork? thank you

No additives, just cook low and slow.

Most pork today is very tender, but shoulders and hams just need low and slow cooking.  When you say additives I'm not sure what you mean.  Most commercial rubs have additives but not for tenderizing but for enhancing or to keep the rub for caking.

You can try marinating overnight to help break down the tissue (a little lemon juice in the marinate will help)  Vinegar also helps break the fibers down but don't overdo it or you'll end up with mush.

You could also buy a tenderizing device - it has many sharp fork like prongs with which you can pierce the meat to help break it down,a knife or fork works just as well.

My preference is to put a good rub on it and cook it low and slow.
