Barbecue/BBQ Grill

Question
I am in dire need of a grill. My problem besides not having much of a budget to work with is that I like to cook with both gas and charcoal. I also like to smoke meat. Is there 1 grill that would accomplish all of these?

Answer
No grill that I have ever heard of can do all three.  It's the cooking with gas that makes it impossible -- you can pretty easily find a combination charcoal grill/smoker.  Both Weber and Brinkmann make the things -- the Brinkmann Smoke'N Grill (17" diameter) lists for $80, and the Weber Smokey Mountain (19") for $300 (but it has more bells and whistles).  Look at them online and make your choice!

I don't own a gas grill, but I use them from time to time, and it's relatively easy to smoke with them -- just use indirect heat (gas with wood chips on one side, meat on the other).

Expertise

I can answer questions having to do with grilling or barbecuing meat (but not pork), poultry, fish, and vegetables over charcoal or wood. I also have some expertise in marinades and spice mixes. I cook only with charcoal and wood, so please do not ask me any questions about gas or electric grills.

Experience

I've been cooking with fire and smoke for 25 years, using charcoal and wood almost exclusively. While I do not usually cook with gas, I'm willing to try to answer cooking questions in this area. I cook meat, poultry, fish, and vegetables, and I've experimented with a lot of different recipes and techniques. I am not able to answer questions about grilling or barbecuing pork. Most recently I've been using slow-cooking (indirect heat) techniques, and have been very successful at it.
